Cooking Class Camp for children ages 6 and up
3 Days in a row.  CHOOSE:  July 24, 25 and 26 OR August 1, 2 and 3 from 10:30 to 12:30 – $120 per child.  All food is included.  We eat what we make in class or they can wrap it up and take it home.

Summer Eating Swaps

I hope your summer is off to a great start?  What are your summer plans?  Do you go away for a week or more, take Daycations or Staycations or just love to stay home and relax?  Whatever brings you joy take the very best care of you.  Take a deep breath in and breathe out the toxic thoughts, people, stress and negativity.  Do this at least 5 times each day.  Focus on whatever brings you joy.

For some people the summer can get really hectic and difficult to make healthier choices.  If that happens to you forgive yourself and make the best choices you can most of the time.  I will be making my annual trip to Florida in July.  It is a combination of business and pleasure.  It is always a pleasure to do business in Florida :).  I always take some Nutrition related classes while I am there.
Above all totally enjoy your summer.  If you would like help with some better choices this newsletter may be helpful to you and feel free to share it.
Try These Ideas.  They are refreshing and healthier!   Infused Water Instead of drinking juice boxes and sodas, drink unsweetened iced teas, lemon water or infused waters.  Sliced cucumbers in water is one of my favorites.  FYI:  Green and black teas have been studied for their antioxidant benefits.  For a refreshing boost of flavor add mint leaves, fresh fruit or cucumbers to your water.  Frozen fruit will help to chill the drinks longer.  Watermelon is refreshing to eat on it’s own or add to infuse your water.  These are also great to add to a cocktail.
 Strawberry Avocado Salad.  Perfect meal for the summer when everything is fresh in season. You will need 1 ripe avocado, 1 cup of sliced strawberries, 1 cucumber and your favorite greens.  Add my Lemon Basil Dressing or your favorite dressing.  Stay away from the bottled dressings with additives and chemicals.
Lemon Basil Dressing:  I use a food processor. 1 to 2 cloves of peeled garlic, 1 handful of fresh basil, 1 whole lemon juiced and 1/4 cup of olive oil.  Blend all ingredients together and add to your salad or use as a marinade.
 Fresh Cut Vegetables and Hummus
Try to avoid the saturated fat in potato chips and dip.  Instead choose to snack on fresh cut vegetables.  You can also add some baked pita chips or gluten-free
whole grain crackers.                 Roasted Vegetables
Summer is known for potato salad but it usually has a mayonnaise based dressing.  You can substitute ripe avocado for the mayo or a healthier alternative to this classic could be to use roasted sweet potatoes for extra fiber and Vitamin A and an olive oil based vinaigrette.  You might also enjoy skipping the potato salad and roast a variety of your favorite vegetables with fresh herbs and garlic.  They are delicious served hot or cold and loaded with fiber and healthy nutrients.
  Portobello Mushroom Burger
Instead of the traditional beef hamburger enjoy a 4 ounce burger made with ground turkey breast.  I love to add chopped vegetables to my ground turkey and make my own but you can buy turkey burgers also.  Cook the turkey burger to 165 degrees.  Top it with some sliced avocado or guacamole to add some healthy fat instead of mayo.  I like to add a spicy mustard.  Another delicious alternative is a Portobello Mushroom Burger.  I season it with Himalayan Sea salt and pepper and add some fresh herbs.  You can drizzle a little avocado oil if you like or a balsamic vinaigrette.  Black bean burgers are delicious too.  I have made them myself and had one at Plan B Burger.
 Dark Chocolate, Walnuts and Fresh Cherries— Instead of eating a candy bar or processed energy bar enjoy a couple of pieces of 70% or darker chocolate, walnuts and fresh cherries.  They are in season right now.
